Description

This recipe is a quick one-pan meal featuring sausage and zucchini, perfect for a weeknight dinner. It’s simple to prepare and full of flavor.


Ingredients

  • 1 pound ground sausage (Italian or breakfast)
  • 2 medium zucchini, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup shredded Parmesan cheese (optional, for serving)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground sausage to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
  3. Add chopped zucchini and onion to the skillet with the sausage. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
  4. Stir in minced garlic, diced tomatoes (undrained), basil, and oregano. Bring to a simmer.
  5. Reduce heat to medium-low, cover, and cook for 10-15 minutes, or until zucchini is tender.
  6. Season with salt and black pepper to taste.
  7. Serve hot, topped with shredded Parmesan cheese if desired.
