Description

Crisp and tangy pickled dilly beans are a flavorful snack or side dish.


Ingredients

Scale
  • 1 pound green beans, trimmed
  • 3 cups white vinegar
  • 1 cup water
  • 1/4 cup pickling salt
  • 4 cloves garlic, peeled
  • 4 sprigs fresh dill
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon mustard seeds (optional)

Instructions

  1. Wash and trim green beans.
  2. Combine vinegar, water, and salt in a saucepan. Bring to a boil.
  3. Pack green beans, garlic, dill, red pepper flakes (if using), and mustard seeds (if using) into sterilized jars.
  4. Pour hot vinegar mixture over beans, leaving 1/2 inch headspace.
  5. Remove air bubbles and seal jars.
  6. Process in a boiling water bath for 10 minutes.
  7. Let cool completely before storing.

Notes

  • Use sterilized jars and lids for proper sealing.
  • Adjust red pepper flakes to your spice preference.
  • Store in a cool, dark place for at least 2 weeks before eating.
