- 2 medium zucchini, sliced
- 2 medium yellow squash, sliced
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine sliced zucchini and yellow squash.
- Drizzle with olive oil and toss to coat.
- Sprinkle with oregano, basil, garlic powder, salt, and pepper. Toss again to distribute seasonings evenly.
- Spread vegetables in a single layer on a baking sheet.
- Roast for 15-20 minutes, or until tender and slightly browned.
- Serve immediately.
Notes
- For extra flavor, add a sprinkle of Parmesan cheese in the last 5 minutes of roasting.
- Adjust seasonings to your preference.
