Description

Simple roasted zucchini and squash, seasoned with herbs and spices for a flavorful side dish.


Ingredients

  • 2 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine sliced zucchini and yellow squash.
  3. Drizzle with olive oil and toss to coat.
  4. Sprinkle with oregano, basil, garlic powder, salt, and pepper. Toss again to distribute seasonings evenly.
  5. Spread vegetables in a single layer on a baking sheet.
  6. Roast for 15-20 minutes, or until tender and slightly browned.
  7. Serve immediately.

Notes

  • For extra flavor, add a sprinkle of Parmesan cheese in the last 5 minutes of roasting.
  • Adjust seasonings to your preference.
