How to Make Hearty Beef & Bean Chili in a Slow Cooker

Okay, time to get cooking! Don’t be scared, this is the easiest thing you’ll make all week. Seriously, the slow cooker does all the work. Just follow these steps and you’ll be chowing down on some amazing Hearty Beef & Bean Chili in no time!

Step-by-Step Instructions for Perfect Hearty Beef & Bean Chili

First things first, grab your slow cooker. We’re gonna dump everything in there! I love using a liner (like my Grandma used to!) for easy cleanup, but it’s totally optional. If you’re not using a liner, give the inside of your slow cooker a quick spray with cooking spray. Just to be safe, you know?

Step 1: In your slow cooker, combine *both* cans of undrained diced tomatoes (yep, juice and all!), the can of chopped tomatoes and green chiles, the vegetable or tomato juice, chili powder, cumin, oregano, and minced garlic. Give it a good stir to get everything mixed up nicely.

Step 2: Add the beef stew meat, chopped onion, celery, and green bell pepper to the slow cooker. Stir it all together so the meat is coated in that yummy tomato-spice mixture. This is where the magic starts, folks!

Step 3: Cover that slow cooker and let it do its thing! Cook on low heat for 8 to 10 hours, or on high heat for 4 to 5 hours. I usually go for low heat because I think it makes the beef extra tender. But hey, if you’re in a hurry, high heat works too! Just peek at it every so often to make sure it isn’t drying out. Every slow cooker is different, after all!

Step 4: If you cooked on low, crank that baby up to high heat! Stir in your rinsed and drained beans (black, kidney, chickpeas, whatever you’re feeling!). Cover it again and cook for just 15 more minutes. This warms the beans through without making them mushy. Nobody wants mushy beans!

Step 5: Time to eat! Spoon that Hearty Beef & Bean Chili into bowls and load it up with your favorite toppings. Shredded cheese, sour cream, fresh cilantro…the sky’s the limit! Enjoy every single bite!

Can I make Hearty Beef & Bean Chili on the stovetop?

You betcha! If you don’t have a slow cooker, or you’re just in a hurry, the stovetop works great. Just brown the beef in a large pot, then add all the other ingredients (except the beans). Bring it to a simmer, cover, and cook for about 1 1/2 to 2 hours, or until the beef is tender. Stir in the beans during the last 15 minutes of cooking. Easy peasy!

Absolutely! This chili freezes like a dream. Let it cool completely, then portion it into freezer-safe containers or bags. It’ll keep in the freezer for up to 2-3 months. When you’re ready to eat it, just thaw it in the fridge overnight, or use the defrost setting on your microwave. Reheat on the stovetop or in the microwave until it’s heated through. So convenient!

Is Hearty Beef & Bean Chili spicy?

That depends on you! As written, it’s pretty mild. If you like a kick, add more chili powder, some cayenne pepper, or even a chopped jalapeño to the slow cooker. You can also use a hotter can of diced tomatoes and green chiles. Taste as you go and adjust until it’s just the right level of spicy for you! Remember, you can always add more spice, but it’s hard to take it away!
