Description

Moist and delicious chocolate zucchini brownies.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup grated zucchini, excess moisture squeezed out
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, combine granulated sugar, brown sugar, oil, eggs, and vanilla extract. Beat until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Stir in the zucchini and chocolate chips.
  6. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  7. Let cool completely before cutting into squares and serving.

Notes

  • Squeeze excess moisture from zucchini for best results.
  • Adjust baking time based on your oven.
  • Store in an airtight container at room temperature.
